You can also add a printed box at the bottom of the letter for you to sign over, something like:

That way, it'll be easy to tell if they have lifted your signature as the printed lines will be visible. Combine this with a subtle yet noticeable variation on your usual sig, and they've got no chance of a successful forgery :-)
