I use www.dayinsure.com for this purpose, which is underwritten by Aviva, but only covers post-1993 cars. Budget (I think) do a similar scheme which covers all cars but costs a bit more, which I have also used in the past. Note that you can't use these kind of policies to buy a tax disc.

Otherwise, the only option is to be added to the owner's policy.
